We all lead busy lives and many of us don’t have much time to cook!  After a full day of work, running errands, and working out, cooking is the last thing I want to do.  This year I won a crock pot at our Camden Christmas party and it has been one of the best investments for my kitchen!  It makes cooking extremely easy and I am able to “cook” all day while I am at work.

I found a very simple, very healthy salsa Verde chicken recipe that I make at least once a week now.  You only need 3 main ingredients and can dress up the recipe however you’d like.

  • First, spray your crock pot with cooking spray so the chicken breasts do not stick.  Lay the chicken breasts evenly along the bottom of the crock pot.

  • Pour the green Chile peppers evenly over the chicken breasts.  Then pour the salsa verde evenly as well.

  • (Optional): You can add 2 tbsp cumin and a dash of salt and pepper to the salsa before adding to crock pot for even more flavor.

  • Let the chicken cook on the “low” setting for 4-6 hours.  Personally, I like the cook mine for 6-8 hours that way the chicken shreds easily.

That’s it! You are done!

Not only is this recipe extremely simple, it’s also healthy and delicious!  I like to shred my chicken and create street tacos for Taco Tuesday or make my own burrito bowl with chopped spinach, rice, black beans, homemade guac, and a little cilantro!
