I am a firm believer that some foods are better the next day - pasta, pizza, and TURKEY. That being said, after a day (sometimes days) of gorging on Thanksgiving foods the sight of another turkey-and-sides combo can be far from appealing and using up all of those leftovers in different ways can be a challenge. To get you started, here are a few recipes to use up your Thanksgiving leftovers in every meal of the day.

BREAKFAST

  • Eggs in Purgatory: For some Thanksgiving can feel like purgatory so this recipe can be a lounge in cheek way to use up some those last bits of mashed potatoes.

  • Sweet Potato Waffles: These waffles are a perfect excuse to dust off that old waffle iron while using up leftover sweet potatoes

  • Thanksgiving in a Blanket: If you way over estimated on the food front, these easy Thanksgiving rolls ups are a great option. Add some scrambled eggs or bacon to make it even more breakfast friendly.

  • Turkey Hash: Didn't end up mashing all the potatoes? Give them a dice and throw in that turkey for a quick breakfast.

  • Waffled Leftover Thanksgiving Brunch: Another waffle winner to use up that stuffing, turkey, cranberry sauce, and gravy.

  • Banana Cranberry Bread: A great cranberry compliment to your morning coffee

LUNCH

  • Turkey Hand Pies: A sweet and savory, family-friendly option to keep the Thanksgiving vibe going strong.

  • Turkey Bacon Avocado Grilled Cheese: Beef up your grilled cheese... with some turkey.

  • Annie's Turkey Salad: Another good use for leftover turkey that you can munch on all week long. For a healthier option sub 1/2 the mayo for greek yogurt or add some diced carrots, grapes, and crushed pecans for more nutrients.

  • Thanksgiving Egg Rolls: This recipe helps use up a little of everything, giving you a bit of Thanksgiving in every bite.

  • Cuban Midnight Sandwich: An easy sandwich to throw together and even better if you have a panin press or old George Foreman grill to crisp it up at the end.
